A little background: I am not a cook. I also happen to be vegetarian,
which complicates my recipes even further. My mother & sister are very
different but very fabulous cooks. I never really had the desire to learn
how to do much beyond toast. I like to blame the fact that I rarely eat
a traditional "meal." I'm a snacker. I eat small amounts of food throughout
the day and I pretty much refuse to go more than three hours without eating,
or things get ugly. The idea of spending hours in the kitchen to cook more
food than I can eat in one sitting just doesn't appeal to me. Plus I'm likely to
get full snacking on all the ingredients long before the meal is fully prepared.

So my recipes are quick, insanely easy, and small portions. As part of my
101 in 1001, I vowed to create a go-to menu for those days when I don't want
to spend much time and energy on dinner. Ohh.. right... that would be every
day. Anyway, here's the first installation of recipes for the hopeless cook, and
for those of you who are baffled by the idea of preparing/eating Tofu.
Tofu & Veggie Stir Fry
Ingredients:
Packet of Simply Asia Ginger Teriyaki Stir Fry Sauce, or whatever strikes your stir fry fancy
Assortment of Frozen Mixed Veggies
Organic Tofu, Extra Firm (I love Twin Oaks brand, especially the Fine Herb selection)
Directions:
Step 1: Heat vegetable oil in a large nonstick skillet over medium-high heat.
Step 2: Add chopped tofu. Cook 3-5 minutes.

Step 3: Add frozen veggies. Cook until tofu is golden brown and veggies are soft.
Step 4: Add Stir Fry Sauce (I usually add half a serving to cut back on the sodium)
